Ready for a little MEAT FREE MONDAY inspiration? Fancy trying beetroot gnocchi? It’s super easy and cheap. I bought 3 raw beetroots in my local farm shop for 22p! All you have to do is blitz cooked beetroot to a puree then mix with cooked mashed potatoes, flour and an egg. Roll into a long sausage shape and chop into bite size piece. Boil until they float and serve with a butter sauce with a bit of orange zest. Boom!
