Meat Free Monday – Gnocchi

MEAT FREE MONDAY! Need some dinner inspiration? Try spinach and ricotta gnocchi! Super simple, just mix chopped blanched spinach with ricotta cheese and flour. Chopped into bite size pieces and cook until they float plus 2 mins. Serve with olive oil, lemon juice and parmesan shavings… yum!
