Ever made Arancini? I hadn’t… wow it’s epic! And delicious! Homemade mushroom risotto, cooled, then made into balls stuffed with mozzarella pearls. I would suggest making the risotto and balls on Sunday evening, keep them in the fridge overnight and then breadcrumb and fry them for your MEAT FREE MONDAY. I served ours with Red Pepper Relish by Compton McRae which I have to say made them even more delicious!
