Meat Free Monday – Asparagus Tart

MEAT FREE MONDAY inspiration time. This asparagus tart is quick and easy to make and tastes good too. I mixed risotto cheese with chopped spinach and used it as a base on top of ready rolled puff pastry. Topped with pan fried asparagus and pine nuts then cooked in the oven for 20 mins. Served with boiled eggs and parmesan… yum!
