Meat Free Monday – Spring Rolls

As we’ll be celebrating Chinese New Year this week, I thought it only right to theme MEAT FREE MONDAY with a Chinese food theme. If you feel like trying something new in the kitchen then making your own spring rolls is good fun. I just stir fry a pack of mix veg in soy sauce then fill filo pastry sheets and cook in the oven for 20 mins. serve with sweet chilli dipping sauce, yum!
