What a treat I have for you this MEAT FREE MONDAY! My most recent discovery of what to cook with Jackfruit… Vegan Chinese style ‘faux duck’ pancakes… yum. These taste amazing and are super easy to make.
I used a tin of Jackfruit drained rinsed and then pulled apart and blotted on kitchen roll. Heat 2 tbsp oil in a pan and fry the Jackfruit until crispy on the edges (10 mins) then mix in a little Chinese 5 spice, soy sauce, ginger and hoisin sauce, stir and cook for 2 mins. Serve with Chinese pancakes, cucumber slices and spring onion and a more hoisin sauce.
