Wanna try something a little different this MEAT FREE MONDAY? How about a butternut squash and spinach Rotolo, it’s absolutely delicious!
Prep – Roast peeled and chopped butternut, allow to cool then mash. Slowly fry onions and chopped spinach for 15mins. Make a tomato sauce using passata and crushed garlic, cook for 5mins.
Construct – using fresh pasta sheets layer the mashed butternut, cooked spinach and sprinkle with torn mozzarella. Roll and slice into three. Place upright in an oven proof dish filled with your tomato sauce. And repeat until filled. Cook – 40 mins. Then devour!
