If you’re looking for vegan comfort food this MEAT FREE MONDAY, then look no further! This kale, pasta, bean soup is so good…easy to make, really tasty, 5 of your 5 a day in one bowl plus full of protein!
Fry 2 diced red onions, 2 diced carrots, 3 rough chopped garlic cloves in olive oil for 15 mins. Stir in 500g carton of passatta, 100g kale, drained tin of cannelloni beans, fresh chopped rosemary and 750ml veg stock. Simmer 10 mins. Add 100g margheritine soup pasta and simmer for 12 mins. Done!
